Cheesy Baked Capsicum( Green Peppers)


This is one of those dishes that look like they take a lot of time and effort to make but in truth, is easy to prepare.

Ingredients:
2 medium-sized Capsicum (Green Peppers)
1 medium-sized Potato cut into small cubes
1 cup mixed frozen vegetables(Carrot, Beans,Peas)
1 large onion finely chopped
1 green chilli finely chopped
¼ tsp turmeric powder
½ tsp Red chilli powder or ½ tsp Black Pepper powder
1 tbsp lemon juice 0r ½ tsp dry mango powder
Salt to taste
1 tbsps vegetable/ canola/ sunflower cooking oil
4 tbsp grated Cheddar Cheese
1 oz unsalted solid butter cut into small cubes

Method:
Pat dry washed capsicum with paper towel. Cut each into half so that stem is attached to both the pieces of each capsicum.Remove all the seeds and keep them aside for later use.
Microwave potatoes till they are cooked.
Heat cooking oil in a pan on medium flame, till hot. Add the chopped onion, green chillies till they turn light golden.
Stir in potato cubes and vegetables.Add all the powdered spices and fry for 1 minute. Turn off the fire. Add 2 tbsp of grated cheese and salt to it and mix well.
Fill each green pepper to the top with this mix. Press down and top up to ensure they are well filled. Put butter chunks over the vegetables.
On an oven tray spray oil and arrange capsicum pieces. Spray some on capsicum pieces also to give them shine.
Bake these in a preheated oven at 250 degree for 15-20 minutes or till they are tendor. Now sprinkle cheese over capsicum pieces and bake again for 1-2 minutes or till the cheese melts.
Serve hot with paratha
